It rarely appears on a mood board, yet it quietly decides whether your kitchen passes inspection, whether the dining room feels fresh or stuffy, and whether the shop upstairs files an odour complaint in your second month of trading. In Singapore, exhaust and air-handling also sit at the intersection of several authorities and your building's management, so getting them wrong triggers redesigns and delays rather than a quick fix. Why ventilation is the system café owners underestimate most
Most first-time owners budget carefully for the counter, the seating and the finishes, then treat air as something that just happens. It doesn't. Extraction, fresh-air supply, grease interception and odour filtration are a connected system that shapes your ceiling heights, your layout and your approvals timeline — and because so much of it is hidden above the ceiling or behind the kitchen, problems only surface once the space is built and running. Not every café needs a full commercial exhaust hood, and this is the first question worth answering because it drives so much of the cost and complexity. Fire-rated ducting and the exhaust route
Once a hood is in play, the exhaust has to travel somewhere — and the route it takes is both a safety matter and a building-management matter. Kitchen exhaust ducting is typically required to be fire-rated, and the path from your hood to the discharge point has to be approved rather than run wherever is convenient. In a mall or multi-tenant building, this is where the building's own engineers and management come in: they commonly approve the exhaust route and discharge location and enforce minimum standards regardless of how small your café is. Cleaning the air before it leaves: grease and odour filtration
Extraction alone isn't enough if what you're pushing out is greasy or smells of the kitchen. Grease and odour filtration systems — frequently including an electrostatic precipitator, or ESP — clean the exhaust air before it discharges, which is what keeps grease out of the ductwork and cooking smells out of the surrounding air. Malls and building managers often require this outright, and even where they don't, it's what stands between you and a neighbour dispute. Filtration also needs maintenance to keep working, so factor in access for cleaning and servicing rather than sealing it behind a finished ceiling.
Make-up air: the reason a cold café can still feel stuffy
Here's a problem that surprises owners: the air-conditioning is running hard, the room is cold, and it still feels stale and heavy. The usual culprit is air balance. Every cubic metre your exhaust pulls out has to be replaced by fresh air coming in — and if it isn't, the space slides into negative pressure.
